Thursday Night Sausage Summer Stew

Tonight, I walked into the grocery store with no clue as to what I wanted for dinner.  After staring at the meats for a good ten minutes, I overhead another lady buying Italian sausage to put in her lasagna.  I used to love lasagna, but alas, not paleo. But sausage? Yes! That’s what I wanted to eat.  So set on my sausage decision, I left not buying anything else. I can be so one-track minded sometimes! Once home, I found: spinach leaves, a bell pepper, onions, parsley, and a can of diced tomatoes.  Here’s what I made with these ingredients…a sausage summer stew.

Ingredients (made enough for 3 hungry high school girls, my mom and myself):

Italian sausage links (I used 4 although I probably could’ve had more)

1 bell pepper (color of your choice!)

1 onion

2 cups (very approximate) spinach leaves

1 14.5 oz can of diced tomatoes

3 pinches of salt and pepper

Instructions:

1. Dice the onions and bell pepper.

2. Wash the spinach leaves.

3. Cut up the sausage links into little 1 inch cubes.

4. Heat up a pan or wok. Once hot, add maybe a couple tablespoons of olive oil. Wait a minute before adding the onions. After the onions, add the sausage. Stir until the sausage turns brown.

5. Add the bell pepper.  After a couple minutes, add the diced tomatoes.  Once the tomatoes are heated through, add the spinach leaves and voila! You’ve got yourself a stew.

You’re more than welcome  to add or subtract ingredients as you’d like.  I wish I had some garlic to add in there! I added some chopped parsley right before serving.  Tonight, I opted to pair this with some cauliflower “rice. What would you choose to pair it with?

Berry Cobbler

It’s now July and while it doesn’t quite look or feel like summertime where I am, the fruits I see at the store and Farmer’s Market say otherwise. Summertime means strawberries, blueberries and blackberries galore! When I lived in Switzerland, my roommates and I planted a mini strawberry and blueberry patch.  The planting wasn’t so much fun but boy, did I love the fresh berries I got to eat!

The other day, I came home with a bunch of blueberries and blackberries. As much as I love just washing and eating them plain, I felt like something a little more.  Maybe a paleo-friendly cobbler? Mmmm.   Thank you, Everyday Paleo for this tasty treat idea!

Ingredients:

3 cups of fresh blackberries (I used 2 cups blackberries and 1 cup blueberries)

1.5 cups almond meal (finely ground almonds)

1 egg

2 tablespoon coconut oil

a teeny bit of honey (I’ll let you decide how much a “teeny bit” is)

cinnamon to taste

unsweetened coconut milk (I skipped the coconut milk but it sure sounds tasty)

Instructions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Pour the berries into a pie pan.

3. In a small bowl, mix together the egg, almond meal, coconut oil and cinnamon.  I tend to be a little generous with the cinnamon. . .again it’s up to you. Stir well.

4. By hand, crumble the almond meal mixture over the berries.  Drizzle a bit of honey over the berries and almond meal crumble.

5. Bake for about 35 minutes.

Enjoy this totally paleo and totally tasty treat.  I can’t wait to make it again!

Let’s Get Started!

Pictured here is a piece of chicken thigh with an Italian-style sauce.  I chose to serve my chicken with some mashed cauliflower and broccoli, but of course, you can choose any vegetables you like!  Before I started out, I actually had intended on trying out a paleo barbeque sauce recipe I had found. I followed the recipe but ended up with something that was certainly delicious but not so barbecue-y.  So…we shall call this an Italian-style sauce.

Ingredients for sauce:

1 6 oz can of tomato paste

1 1/4 cup of beef stock

3 cloves of garlic

1/2 an onion

2 tablespoons dijon mustard

2 tablespoons apple cider vinegar

1 tablespoon Olive Oil

1 teaspoon sea salt

1 tablespoon chili powder

Instructions for sauce:

1. Dice up the onions and garlic as finely as possible.  It’s ok for the sauce to be a little chunky but not too much.  Sometimes I find it easier to just stick it all in a food processor for a few seconds.

2. Heat up a sauce pan on medium-high heat and add olive oil when warm.  Add onions and garlic and stir for a minute or so.

3. Add all remaining ingredients and bring heat down to low and let simmer with the cover on.  Simmer for about 20-30 minutes.

4. Taste it as you go. If you feel like it needs a little salt, go ahead and add some! Maybe a little more spice? More chili powder!

Chicken

As for cooking the chicken, it’s up to you how you do it. You can oven cook it, pan fry, grill. . .I chose to go the easy route and wrapped up the chicken with the sauce in tin-foil and threw it on the grill for 25 minutes.
