Hi Friends, both old and new—
My name is Noe. I also like to call myself the Paleo Princess.
Over the last couple years, I have grown to love this cave man/woman-esque way of eating and am so excited to share it with all of you! I’ve had a lot of fun experimenting and coming up with new and different ways to dine daily. Who knew Paleo eating could be so neat and enjoyable?
When Paleo eating was first introduced to me in November of 2009, it seemed like such a strange thing and almost impossible to take on. Cereal had been my breakfast of choice for years now and the idea of eating something else was a foreign idea. At first, I decided to enter gradually, slowly adding more meats and pulling away the bread. However, in late January (2010), inspired mostly by fellow crossfitters, I decided to dive in head first and go total Paleo. After eating like this for over a year, I am a total believer. I love the way I feel, the way I perform (athletically) and I like the way I look.
To embrace the total Paleo package, I emphasize local, fresh, and organic. I get most of my produce from the Farmer’s Market, my CSA, and my garden. When it comes to meat, I do my best to purchase grassfed and pastured meat from ranchers and farmers nearby.
I am delighted that you are joining me in this lifestyle. I hope you enjoy the photos and recipes, and of course, the healthy goodness that is the Paleo Diet.
